SC BBQ HASH

Ingredients:

 2 pounds of pork BBQ, shredded or chopped (cooked)

2 pounds of chicken meat, shredded or chopped, any type (cooked)

2 medium onions (chopped)

1 28 ounce can of diced tomatoes (with juice) 

6 large white potatoes, peeled and cut into chunks 

3-4 cloves of garlic (chopped)

2 tbsp. kosher salt 

2 tbsp. coarse ground black pepper

1 tbsp. garlic powder 

1/4 cup Worcestershire sauce 

1/8 cup cider vinegar 

 Instructions:

In a large stock pot, sauté the onions in olive oil and chopped garlic until the onions are just translucent. Add all the other ingredients into the pot, and then cover the ingredients with water. Cover the pot and simmer for about an hour, or until the potatoes start to break up, stirring periodically. If it's too chunky or the potatoes are tender, use a whisk and stir vigorously, and let it cook a little more. You may have to add more water.  Serve over hot rice.
