
GRILLED PORK LOIN
Ingredients:
Marinade of choice (I generally use a store-bought sesame ginger marinade)
Meat:
Pork Loin (whichever size you prefer)
Cooking Method - DIRECT
Place the pork loin (it'll be in two pieces) into a resealable bag, and pour the marinade into the bag over the meat. Seal the bag, and shake well to distribute the marinade over the meat. Put the bag with the meat inside the refrigerator for at least 2-3 hours (longer is better). When you're ready to start cooking, take the bag with the meat inside out of the refrigerator, and set it on the counter for at 20-30 minutes to allow it to get up to room temp. Now it's time to get your Egg ready to cook!
Set your Egg up for direct cooking, and let it get up to 350 degrees. Place the two pieces of pork loin on the Egg, and grill for approximately 20 minutes per side at 350. Check the internal temp in the thickest part of the meat. You'll want to take the pork loin off at 160 degrees internal temp. Once you've reached 160, take the pork loin off, and wrap the meat in aluminum foil. Place the wrapped meat in a cooler, and cover with towels for 15-20 minutes. Letting the meat rest like this will allow the internal juices to redistribute throughout the meat. After 15-20 minutes, remove the pork loin, slice and enjoy!
